Easy Blueberry and Ricotta Muffins

These are easy-peasy Blueberry and Ricotta muffins that the children will love to help you make. The ricotta makes them really moist without needing loads of butter of fat.


  • 250 gs Ricotta cheese
  • 150 gs Caster sugar (you could also use Fruit Sugar or Light Brown)
  • 2 tbsp Vegetable Oil
  • 250 gs Self-Raising Flour
  • 1 Big handful Blueberries
  • 1 Orange (ideally zest and juiced)
  • 2 tsp Vanilla essence or paste
  • 2 Free-range eggs
  • 1 tsp Baking Powder
